Left-over dinner tonight!
I made this last night, it’s suppose to be chicken meatloaf, but I only had turkey, still good. Anyone knows the real difference between turkey and chicken, sometimes I can’t tell the difference. I also made the Tzatziki sauce, Jamie was right, it’s super simple, I used sour cream, instead of plain yogurt (next time I’ll try that), it’s also got cucumber in it, who whould’ve thunk? And of course dill! My new favorite herb!
Greek Chicken Meatloaf With Tzatziki Sauce
MEATLOAF
* 1/2 cup vidalia onion, diced
* 1/2 cup red pepper, diced
* 1/2 cup green pepper, diced
* 1/2 cup celery, diced
* 1 1/2 garlic cloves, minced
* 1 teaspoon olive oil
* 2 lbs ground chicken
* 3/4 cup dry breadcrumbs (Panko, if available)
* 1/4 cup low-fat mayonnaise
* 2 large eggs, lightly beaten
* 2 tablespoons fresh flat-leaf Italian parsley, chopped
* 2 teaspoons mediterranean oregano flakes
* 2 tablespoons lemon zest (can sub with lemon juice)
* 1/4 teaspoon salt & freshly ground black pepper
* 1 teaspoon red chili pepper flakes (optional)
SAUCE
* 1/2 cup cucumber, peeled and grated
* 1 1/2 teaspoons garlic powder
* 1 teaspoon dry dill weed, finely chopped or 3 teaspoonsfresh dill weed, finely chopped
* 1/4 teaspoon dry mustard (optional)
* 1 cup low-fat sour cream or plain yogurt
* finely chopped mint, to taste
MEATLOAF
1. Preheat oven to 350F degrees.
2. Heat skillet over med-high heat, add oil.
3. Sauté onion, peppers celery to soften, about 5 minutes.
4. Add garlic; cook for 2 minutes to release flavor.
5. Set aside.
6. In large mixing bowl, stir together chicken and next 8 ingredients plus sauté veggies.8
7. Mix until just combined; too much mixing toughens meat.
8. Spray a 9” loaf pan with cooking spray.
9. Spread mixture into the pan, making sure that there are no air spaces in mixture.
10. Bake for 1 hour and 10 minutes or until a meat thermometer inserted in center register 165F degrees.
11. Let stand 10 minutes before slicing.
SAUCE
12. Mix all ingredients and chill at least 2 hours to blend flavors. Makes 1 cup.

Sunday brunch.
Asparagus Summer Salad
2 lbs. thick asparagus, cut into 2-in. pieces
2 tbsp. each fresh lemon juice and Dijon mustard
3 tbsp. olive oil
1/4 cup each chopped fresh basil, chives, and cilantro
1 cup thinly sliced red onion
3/4 cup toasted pine nuts
2 oz. feta cheese, crumbled (1/2 cup)
1/2 tsp. each salt and freshly ground black pepper
* I added chickpeas because I had some left over, about 1/2 cup.
1. Bring a large saucepan of water to a boil. Drop asparagus into water
and cook until bright green and slightly softened, 1 to 2 minutes. Drain
asparagus and rinse with very cold water until cool to the touch.
2. In a large bowl, whisk together lemon juice, mustard, oil, and herbs.
Add asparagus, onion, pine nuts, feta, salt, and pepper, and stir to combine.
This is from last week. Jamie and I finally went to Griffith Park, and we watched the star show. I loved it. The last time I saw it was the beginning of senior year in college, which was the first time I went there, Mimi was driving, Wade was sitting up front (wow, Wade!) and on the way there Micah and I sealed the deal on working together on our sr. thesis, we shook on it. haha, fun times.
On a completely different subject. I just had a long phone conversation with Jamie, at the 99cent store, no less! She asked me if I wasn’t doing what I’m doing right now, what would I be doing? Mimi asked me that same question last week. I guess I don’t really know, but after our conversation, I realize that whatever it is I’m doing, I think I need to be around people. I haven’t heard Jamie that happy, I think all the time I’ve known her, and I’m so glad that she is. It’s funny how many times she said, I love them, I love them, Caroline, I love them. That makes a lot of sense. You should work with people you like, people who are your friends. I think other than loving what you do, that’s another thing that makes something to not just be a job. I never really believe the whole, have a life out side of work thing. I feel like anyone’s who’s happy, I mean really content with their life as a whole, their work is their life, or rather their life is their work, the two is inseparable. I think this is what people mean when they say I don’t want to just have a job, I want to do something I love. When you can’t tell the difference between work and real life. I think that’s what happiness is, not knowing the difference between work and play.

I want to have breakfast like that, at least once a week. Is that crazy? Maybe if I wake at 8 am every morning I could.

Micah and I need to structure our working day like this. Seriously, people really can have lives and have jobs, at the same time! I never really like resolutions, especially new year’s resolutions, cause they’re more like wishes than actual goals. But this is something that I want to strive for this year: get a life.

wolf moon!
Micah needs to tell me how to do that ^. It’s like that time we went to Griffith Park and looked through the telescope, and saw all the craters on the moon.
Well I went outside to look for the so called wolf moon, turns out the sky is completely covered with clouds, and since LA is so bright all the light just bounced back, the sky is completely bright, it’s like the complete opposite of the pitch black sky on this picture.
This is one of those I wish I don’t live in LA moments. Oh well, at least I get to see it here.
